This Mushroom Wellington is the way to go if you’re looking for a vegetarian Christmas main! This has been the most popular Christmas recipe on my blog for the last 4 years running! It’s hearty, packed with 3 different types of mushrooms, a mirepoix, and plenty of herbs for the quintessential festive flavour. It’s definitely a wellington with a lot of umami. Serve this mushroom wellington up with all the trimmings for a great veggie Christmas dinner. It goes brilliantly with my garlic and herb roast potatoes and my cauliflower cheese. Roasted sprouts, parsnips, and carrots are also essential. And don’t forget some Yorkshire puddings as well as the onion gravy! Also – if you’re plant based, make sure to double check that your instant mash doesn’t contain milk powder. Roasted garlic au gratin potatoes, perfect side for the holidays if you don’t want to make mac & cheese! Full recipe below Ingredients – 8 russet potatoes, thinly sliced – 1/2 medium onion, diced – 2 garlic heads, roasted – 4 oz pancetta – 2 tbsp butter – 3 tbsp flour – 2 cups half and half – 7 oz guyere cheese, shredded – 7 oz smoked Gouda, shredded – 7 oz montamore cheddar, shredded (or Parmesan) – 1 tsp garlic powder (add more or less for all seasonings) – 1 tsp onion powder – 1 tsp smoked paprika – 1 tsp dried thyme – Salt and pepper to taste Instructions Instructions: – Preheat your oven to 400°F (200°C) – Slice the top off the garlic bulb, drizzle with olive oil, season with salt & pepper, wrap in foil, and roast for about 40 minutes until soft and caramelized. Once cooled, squeeze the roasted garlic out of the cloves and mash it with a fork. Set aside. – Wash and peel the potatoes. Slice them thinly (about 1/8-inch thick). Place the sliced potatoes in a bowl of cold water to prevent browning. – In a saucepan,on medium heat add pancetta. Cook until slightly crispy then remove from pan. – Add butter to remaining grease from pancetta, diced onions, and sauté until translucent. Add flour and whisk until flour is cooked. – Pour in the half and half, stirring to combine. Add roasted garlic paste, mix until combined. Bring to a simmer, add seasonings, and cook for 10-15 minutes. – Stir in the cheeses until melted and smooth. Season with salt and pepper to taste. – Grease a 9×13-inch baking dish with butter or cooking spray. Layer the sliced potatoes evenly in the dish, slightly overlapping. Pour the creamy sauce over the potatoes and spread to make sure it evenly coated – Cover the dish tightly with aluminum foil and bake 320F (160C) for 50-90 minutes, until the potatoes are tender when pierced with a fork. – Remove the foil and bake uncovered on broil for 3-5 minutes or until top is golden and bubbly • • #recipes #augratin #scallopedpotatoes #dinnerideas #fyp #creatorsearchinsights

Episode 3 | Christmas Sides 🎄 Cauliflower Cheese 🧀 A staple of mine at home with any roast. This is THE perfect side dish for your Christmas meal this year! The added miso and Boursin are a game changer 🔥 Serves 10 or more (as a side) 2 x large cauliflower Olive oil Salt & pepper 100g butter 200g flour 2 litre milk 2 garlic cloves 120g cheddar cheese (plus extra for topping) 80g gruyere 1/2 Boursin 2 tsp miso paste 20 grinds black pepper 2 tsp mustard Grating of nutmeg Sprinkling of parsley Season with salt to taste after adding cheese 1. Rinse and cut the cauliflower up into medium size florets and cut the ends of the leaves. 2. Add the florets and leaves into roasting trays, add some oil, salt and pepper, then roast in an oven at 200 C / 390 F for 20-25 minutes until starting to brown. 3. Meanwhile, prepare the cheese sauce. Melt the butter in a large pan then add the garlic. Cook over a medium heat until the butter and garlic have both browned (make sure not to burn the garlic otherwise it will go bitter). Add the flour, then mix together and cook for a few minutes to make the roux. 4. Gradually add in the cold milk, continually whisking, until all combined. Bring to a gentle bubble and cook for a few more minutes. 5. Remove the sauce from the heat, add in the remaining ingredients then stir though until melted. 6. Preheat an oven to 180 C / 355 F. 7. Add the roasted cauliflower and leaves into a wide dish, then cover with the cheese sauce. Mix until the sauce is distributed evenly, then top with more cheddar. 8. Place into the preheated oven and cook for 30 minutes until starting browned on top. If needed, place under the grill to quickly speed this up if more browning is needed after 30 minutes. Episode 1 | Christmas Sides 🎄 Roast Potatoes 🥔 Serves 6-8 2kg king Edward potatoes, peeled and cut into chunks (these my favourite variety as they are incredibly fluffy, therefore crisp up the best) A few garlic cloves, peeled and crushed in the palm of your hand 500g goose / duck / beef fat Few sprigs of rosemary, stalks removed Zest of 1 lemon Generous sprinkling of sea salt 1. Add the potatoes into a pot with a pinch of salt and the garlic cloves (optionally add in some rosemary sprigs here too), cover with cold water and bring to a boil. Cook for roughly 10 minutes until fork tender, but not falling apart. 2. Preheat an oven to 200 C / 390 F fan. 3. Strain the boiled potatoes then leave to steam dry in the colander for a few minutes. Add back into the dry pot, cover with a lid and shake to lightly ‘fluff’ them up – this is what gets you the extra crispy edges. 4. Add the goose fat into two baking trays, place into the oven and preheat the oil for 15 minutes. 5. Remove the tray from the oven and then carefully add in the potatoes. Coat each potato in the goose fat then place them back into the oven. 6. Cook the potatoes for 60-75 minutes, turning every 20 minutes or so to coat them evenly in the oil. 7. Whilst cooking, prepare the rosemary salt bg blending together, or finely chopping, the rosemary, lemon zest and salt. 8. Once the potatoes have cooked and are a golden brown colour all over, remove them from the oven and lift out of the tray with a slotted spoon. Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary. This is THE perfect potato for any roast or Christmas dinner, or simply to go alongside a bowl of rich gravy. Enjoy! 🔥 #food #cooking #foodtok #fyp #christmas #easyrecipe #christmasrecipe

(lactose-free) butter, melted (100 g) 1 cup sugar (240 ml) 2 eggs 1 teaspoon vanilla extract 1/3 cup unsweetened cacao powder (80 ml) 1/4 cup all purpose (gluten-free) flour (60 ml) pinch of salt • frosting: 1 cup (lactose-free) whipping cream (240 ml) 3.5 oz. (lactose-free) cream cheese (100 g) 1/4 – 1/3 cup powdered sugar, to taste (60-80 ml) 1/2 teaspoon vanilla extract • add ins: For the chocolate frosting: 1 – 2 teaspoons cacao powder For the green frosting: pinch of matcha/a few drops of green dye • toppings: chocolate chips shredded coconut persimmon sugar eyes sprinkles mini pretzels cranberries • 1. In a bowl whisk together melted butter and sugar for about 1 minute 2. Add the eggs and vanilla extract and whisk again for 1 minute 3. Add cacao powder, flour and salt and stir to combine 4. Spread the batter into a small greased round springform cake pan. Bake at 175 Celsius degrees / 345 in Fahrenheit for about 30 minutes 5. Let the brownies cool down 6. Beat whipping cream in a mixing bowl until peaks form. In another bowl mix together cream cheese, sugar, and vanilla. Then fold in whipped cream. 7. Divide the frosting into three bowls. Add cacao powder to one bowl and matcha/green dye into one bowl and stir 8.
