It disperses the flavors so well, so every bite is magical! So I took my Sumac-Spiced Hummus & Veggie Pitas from my cookbook and chopped it up for a fun twist on the recipe. @thefitlondoner PESTO TOFU CHOPPED SANDWICH 🌿 Makes 1 big baton. ▫️4 gem lettuce leaves ▫️1 sliced tomato ▫️3 sun-dried tomatoes ▫️1/4 a red onion ▫️140g smoked tofu ▫️1/2 an avocado ▫️1 tbsp pesto ▫️Salt and pepper to taste ▫️1 tsp mayo ▫️A carb vessel of choice, I used a tiger baton I’m not sure I need to write out a method for this one… but essentially just chuck everything on a chopping board and get chopping! Keep going until the pesto, avocado and mayo had coated everything. Then grab your carby vessel of choice (I hollowed mine out slightly to make more room for the fillings) and scoop it all up!
