5 recepten voor studenten die jammer genoeg geen krokusvakantie hebben

Heb jij helaas geen krokusvakantie, en zit je deze week gewoon op kot? Dan sleuren deze vijf supersimpele recepten – speciaal voor studenten – je er ongetwijfeld door. Laat het smaken!

Hoewel veel studenten genieten van de krokusvakantie, is dat lang niet voor iedereen zo. Deze vijf zonnige receptjes laten de week echter wel voorbijvliegen, smakelijk!

Maandag: (zelfgemaakt) flatbread met kip en pikante mayonaise

Grab my cookbook ‘Low-Cal Kitchen Bangers’ in the bio! 💕 Ingredients (serves 2): 200g thinly sliced chicken breast  1 and ½ tsp peri seasoning  Tbsp lemon juice 110g self raising flour  120g fat free authentic greek yoghurt  10g light butter  Tsp chopped garlic  A couple sprigs of fresh parsley chopped 2 half fat cheddar slices  2 slices of tomato  30g peri mayonnaise 50g shredded lettuce  💕Start by seasoning the chicken breast in a bowl with the peri seasoning and lemon juice. Mix together and set to one side.  💕Whilst the chicken marinades, in a bowl, mix together the self raising flour, greek yogurt and salt. Once most of it is clumped together, use your hands to mould into a ball. Then split into two. 💕Push out into a circular shape using your hands, then roll out further. 💕Next, add the chicken to a pan and cook for around 8 minutes until cooked through and remove from heat.  💕Heat a large pan and add each rolled out dough into the pan (I did these in two separate pans to speed it up). Pan fry for 8 minutes or so until golden.  💕Once golden, mix together the butter and garlic and blast for 15 seconds in the microwave. Brush over the bread and flip for 30 seconds. 💕Remove from heat, and add the cheese slices on one half along with the chicken and tomato. Fold the other half of the flatbread over. Leave over low heat for a couple of minutes until the cheese has melted.  💕Once the cheese has melted, remove and add the peri mayonnaise along with the shredded lettuce before serving. Dinsdag: courgetterolletjes met ricotta en tomatensaus

Zucchini roll-ups (also called zucchini involtini) is one of my favourite ways to eat zucchini. Get the full recipe below and also on my blog. Ingredients: Zucchinis * 4 zucchinis * 1 tbsp olive oil * pinch of salt & pepper Ricotta filling * 1 cup ricotta cheese * 1/4 cup grated parmesan cheese * 1/4 cup chopped basil leaves * 1 garlic clove, minced * salt & pepper to taste * 1 egg Other ingredients * 1 jar of your favourite tomato sauce * 1 cup shredded mozzarella cheese * Fresh basil to garnish Prep the zucchini: Slice the zucchini lengthwise to be 1/4 inch thick, then toss with olive oil, salt and pepper and bake in the oven at 400 degrees F for 10 minutes. Make the filling: Mix the ricotta, parmesan, basil, garlic, salt, pepper and egg together in a bowl until combined. Make the rolls: Fill each slice of zucchini with some stuffing then roll-up. Cover the bottom of an oven-safe pan or baking dish with tomato sauce, then place the zucchini rolls in the pan. Top with a touch more sauce, then top with cheese. Bake: Bake in the oven at 400 degrees F for 8-10 minutes until warmed through and the cheese is melted. Donderdag: sushiballetjes met spicy tonijn

@anythingbutramen I love a fun take on sushi from home especially if it’s these SUSHI BALLS 🍚🍣 All you need is rice, canned tuna, and a handful of other ingredients you already have to make an easy sushi-inspired lunch at home 🙌 Fill with any ingredients you like such as avocado, carrots or cucumber! 🥒 *Makes about 6-8 sushi balls* Ingredients: – 1 cup dry sushi rice – 1 can of tuna in water, drained – 2 TBSP mayo – 1-2 tsp sriracha – 1 tsp sesame oil – salt – 1/2 avocado, diced small or any other fillings – sesame seeds – scallions – spicy mayo Directions: – rinse sushi rice well and add to a pot with 2 cups water, bring to a boil, simmer and cook for 15 minutes – remove the rice from the heat and cover with a lid to steam for 5 minutes then transfer to a bowl and let cool – in a bowl, add the drained tuna, mayo, sriracha, sesame oil, salt and mix until combined – if you have a small bowl like a glass prep bowl use it here, it will help with keeping the size the same but if not just use cellophane – place cellophane over the small bowl and add rice, using a spoon spread it out evenly in the bowl – then add a small amount of your spicy tuna mix, diced avocado or any other fillings, top with extra sushi rice and gather cellophane together until you create a ball, repeat this until you use up your spicy tuna mix – top with spicy mayo, sesame seeds, and scallions and serve with soy sauce #homemadesushi #sushi #sushiballs #healthylunch #lunchideas #lunch #easyrecipes #easylunch #dinnerideas #collegerecipes #collegefood ♬ A tu lado – Edgar 🇲🇽
