Pasta carbonara

@chefjackovens Authentic Carbonara Here’s the recipe Ingredients – 400g (14.1oz) – Spaghetti 4 – Large Free Range Egg Yolks 45g (1.6oz) – Pecorino Romano Cheese, Freshly Grated (Substitute for Parmigiano Reggiano) 250g (8.8oz) – Guanciale (Substitute for Pancetta or Bacon) Black Pepper To Taste Method – Bring a pot of salted water to a boil and cook the pasta 1 minute less than the instructions. Add the egg yolks and Pecorino Romano cheese to a mixing bowl and whisk to combine. Set aside. Place a large pan over medium-high, and whilst it is cold, add the Guanciale and gently fry it off for 5 minutes until it becomes crispy and the fat has rendered. There will be quite a bit of fat; if it’s too much for you, you can remove some, but I recommend leaving it in. Turn off the heat. Add the pasta straight from the water into the pan with the Guanciale, reserving 1 cup (250ml) of pasta water. Add the egg yolk and cheese mix and vigorously mix until smooth. It would be best if you worked fast here, as the egg can start to scramble. Once combined, adjust the consistency with the pasta water until you reach the desired thickness and it’s nice and creamy. You may not need all the pasta water. Serve the carbonara in bowls and top with the crispy Guanciale. Grate over fresh Pecorino Romano cheese and top with cracked black pepper (optional). Dig in. I’ll wait for the comments to tell me it’s wrong and that I pronounce guanciale wrong. This recipe achieves the same results whether you add the pork fat to the egg and cheese mix first or do it the way I did in this video. @erekasfood My easy to assemble ITALIAN STUFFED BREAD is perfect for lunch, brunch & can even be served as an appetizer. Why do we remove the guts? Just so we can fit more inside!! Ingredients: 1- 13 inch loaf of thick crusty bread 8 slices fresh mozzarella 2 ripe Roma tomatoes sliced thin 1 tsp fresh or dry oregano 1 tbsp olive oil 3 cloves garlic grated 1/4 tsp salt 3 or 4 slices of prosciutto, ham or turkey 1/2 cup pesto -Preheat oven to 350F -Slice the loaf in half. -Remove most, but not all of the bread from the bottom. Be careful NOT to break through the crust. -Add 4 slices of mozzarella, followed by tomato, then olive oil, oregano, 2 cloves grated garlic, salt, prosciutto & remaining 4 slices of fresh mozzarella. -Brush the top of the loaf with olive oil and grate 1 clove of garlic over the bread. -Bake the bottom in oven for 20 minutes or until the mozzarella has melted and the bread is golden brown. @stephifashion_ Italienische Cannoli 🇮🇹 Ich will mich nicht selbst loben Freunde aber das Rezept ist einfach zu gut und wahr zu sein. Hätte mich da reinlegen können ❤️‍🔥 Zutaten TEIG •250 g Weizenmehl (Type 405) •einen halben TL Backkakao •1 Prise Salz •35 Gramm Zucker •40 Gramm weiche Butter •Ei (Gr. M) •70 mm Marsala Weinlikör •1 L neutrales Öl zum Frittieren Füllung: •500 g Ricotta •6 EL Puderzucker •3 TL Marsala •100 g gehackte Pistazien •Schuss Zitronensaft •3 TL Puderzucker zum bestäuben Für den Teig Mehl, Kakao, Salz, Zucker mischen und in eine Rührschüssel geben. Eiweiß und Eigelb trennen. Butter erwärmen und gemeinsam mit dem Eigelb hinzugeben. Marsala solange hinzugeben, bis der Teig geschmeidig und fest wird. Den Teig in Folie eingewickelt für 60 Minuten im Kühlschrank ruhen lassen. Während der Teig ruht, könnt ihr euch schon um die Füllung kümmern: Für die Füllung den Ricotta durch ein feines Sieb streichen und mit dem gesiebtem Puderzucker cremig rühren. Die Creme mit Marsala glattrühren, den Schuss Zitronensaft dazu geben & in einen Spritzbeutel mit großer Lochtülle füllen. Stellt das Ganze bis zur Anwendung in den Külschrank. Auf einer bemehlten Arbeitsfläche den Teig ca. 2 mm dünn ausrollen. Die Cannoli -Stangen mit etwas Butter bepinseln und mit Mehl bestäuben, dann rutschen die Cannoli nach dem Frittieren besser ab. Aus dem Teig 24 große Kreise (ca 012 cm) ausstechen. Je einen Teigkreis um die Stange wickeln. An den Stellen, an denen sich der Teig überlappt, mit Eiweiß bepinseln und dadurch befestigen. Das Frittierfett auf 170 Grad erhitzen (ihr merkt dass das Fett auf Temperatur ist, wenn ihr ein Holzstäbchen hinein haltet welches richtig sprudlige Blasen bildet) und die Cannoli an den Formen vorsichtig für ca. 4 Minuten im heißen Fett ausbacken. Nach dem Backen sollten sie eine schöne hellbraune Farben haben. Kleine Blasen sind typisch für dieses Gebäck. Nach dem Frittieren auf einem mit Küchenkrepp ausgelegtem Teller abtropfen und komplett auskühlen lassen. Nun mit der Füllung befüllen und die Enden in die Pistazien tunken. Pasta alla vodka met burrata

@breadbakebeyond Creamy Vodka Tortiglioni & Burrata Spring has arrived, so to celebrate I made a comforting bowl of pasta in creamy vodka sauce. It’s rich, spicy, and elevated by burrata—a perfect tribute to the season. Ingredients: – 8 ounces pasta (Tortiglioni or Rigatoni recommended) – 1 cup heavy cream – 3/4 cup Parmigiano Reggiano (reserve some for garnish), grated – 1 1/2 tablespoons tomato paste – 2 shallots, finely chopped – 4-6 cloves garlic, minced – 1 1/2 ounces vodka – 2 teaspoons red pepper flakes (reduce if you prefer less spicy) – 2 teaspoons black pepper – Kosher salt, to taste – 4 tablespoons olive oil or unsalted butter For Serving: – 2 tablespoons fresh parsley, chopped (or chives as an alternative) – Burrata cheese – Red pepper flakes, for garnish – A drizzle of olive oil Instructions: 1. Bring a large pot of water to a boil. Add about 1 tablespoon of Kosher salt. Cook the pasta according to the package instructions until al dente. Drain, reserving 1 cup of the pasta cooking water. 2. In a large skillet over medium heat, add the olive oil, shallots, and minced garlic. Sauté for 1 minute. Stir in the red pepper flakes. 3. Mix in the tomato paste, then add the vodka. Let it cook for 30-60 seconds to allow the alcohol to evaporate. 4. Pour in the heavy cream and add 1/4 cup of grated Parmigiano Reggiano, along with a pinch of salt and the black pepper. Stir well and reduce the heat to low. 5. Once the pasta is al dente, add it to the skillet. Increase the heat to medium and add the remaining Parmigiano Reggiano and about 1/4 cup of the reserved pasta water. Stir everything together, adding more pasta water if necessary, until the pasta is well-coated with a creamy sauce. Adjust the sauce consistency according to your preference by adding more pasta water if it’s too thick. 6. Serve the pasta in bowls. Sprinkle with chopped parsley, top with a piece of burrata, and garnish with additional red pepper flakes. Drizzle with a bit more olive oil. 7. Finish with a sprinkle of grated Parmigiano Reggiano, if desired, and serve warm.
