Udonnoedels met glazed tofu
@freshofftheraq Actually Quick Meals ep 2: My Go-to Udon 🍜 okay but why are udon noodles so good 😭🙏 Here’s the recipe: 1/2 tbsp soy sauce 1 tbsp oyster sauce (I used a vegetarian one) 1/2 tsp maple syrup or sugar 1 tsp dark soy sauce 1 tsp cornstarch 1/3 cup cold water 1/2 tbsp olive oil or neutral cooking oil 1/4 350g block extra firm tofu 2 garlic cloves, minced 2 green onions, whites and greens separated, finely sliced 1 tsp sesame oil 1 serving cooked udon (250g – I like the frozen kind, they’re chewier!) 1. Make the sauce: in a small bowl, stir together soy sauce, oyster sauce, maple syrup/sugar, dark soy sauce, cornstarch and water. 2. Heat oil in a small skillet over medium heat. Crumble your tofu directly into the pan and fry for 3-5 minutes until golden brown, stirring frequently. Add green onion and garlic and fry for another 2 minutes of so. 3. Give the sauce another quick mix, then pour it over the crumbled tofu and stir with a spatula. Let it come to a gentle simmer and bubble for about 2-3 minutes. It should thicken nicely. 4. Pour the sauce over a bowl of cooked udon and top with sesame oil and the greens of your green onion. RECIPE Ingredients: 3 eggs 1 garlic clove, grated Zest of ½ lemon ⅓ cup spinach, finely chopped ⅓ cup chopped mint, finely chopped ⅓ cup chopped dill, finely chopped 2 Tbsp wholemeal flour 1 large zucchini, grated & excess water removed ½ tsp bicarb 150g feta, crumbled Extra virgin olive oil, to cook Tayziki, to serve Method: In a large mixing bowl, place eggs, garlic, lemon zest, spinach & herbs and whisk until combined. Mix in flour & bicarb, then fold in zucchini and feta until just combined. Heat oil on a fry pan over high heat. Add a large scoop of fritter batter to the pan and cook on each side for a minute or until golden and crispy. Repeat with remaining mixture. Ingredients (makes one portion): 1 leftover chicken thigh or breast 2tbsp buffalo sauce Salt & black pepper 0.25tsp onion granules 0.5tbsp olive oil 0.5tsp minced garlic 25-30g grated cheese few slices of red onion 1 small spring onion, sliced 0.25tsp oregano Method: 1️⃣ Shred the leftover chicken, then add to a small bowl with buffalo sauce, onion granules, salt, black pepper & mix well 2️⃣ Spread the olive oil & minced garlic onto a flatbread 3️⃣ Top with half the cheese, buffalo chicken, red onion, then the rest of the cheese & spring onion 4️⃣ Sprinkle over the oregano & some black pepper, then air fry for 5mins (or bake in the oven for 10mins) till the cheese is melted 5️⃣ Cut into pieces & enjoy! #buffalochicken #airfryerrecipes #lunchideas #easylunch #easyrecipe #airfryerrecipe

Curry met gyoza en groenten
@emthenutritionist An actual 5 minute lunch by a nutritionist AD This is my favourite lunch to make. It contains warming ginger, garlic and aromatic chilli from the Very Lazy chopped range. Simply throw everything into one pot and simmer. To serve 2 you will need: 1 tsp EACH of Very Lazy chopped chillies, garlic and ginger 1 tin light coconut milk and 1/2 tin water 2 tsp Thai red curry paste 2 tbsp soy sauce Juice of 1/2 a lime 1 stock cube 1 large carrot and a handful of tender-stem broccoli 12 frozen gyoza Coriander and optional crispy chilli oil to serve In a large pot, sweat the Very Lazy chilli, garlic and ginger down for 30s. Add the Thai curry paste, stock cube, and the tin of coconut milk and extra water. Peel in the carrot, add the tender-stem and 6 frozen gyoza. Place a lid on the pot and bring it to a simmer for 3 minutes. Finish with soy sauce and lime juice to taste and serve. #verylazyverytasty
